Belgian Waffles

Belgian Waffle Recipe
Ingredients
1 1/2 cups Whole Wheat Flour/GF all purpose flour  
1 tsp Ground cinnamon  
2 tbsp  Granulated white sugar  
Pinch of Salt  
½ tsp Baking Soda
1 ½ tsp Baking Powder  
2 Eggs
2 tbsp Vegetable Oil  
1 tsp Vanilla extract 
1 cup Milk of choice (cow’s, almond, soy) ​

Directions
1. Preheat Waffle iron. 
2. In a bowl sift flour, sugar, baking powder, baking soda, and salt.  
3. Whisk in egg, vanilla, and oil until blended well and there are no lumps.  
4. Heat a medium-large pan over medium heat. Lightly grease with oil or cooking spray.  
5. Spoon ¼ cup of batter into waffle iron.
6. Wait until golden brown in colour and if needed flip waffle to allow the other side to become golden brown in colour ~3 minutes on each side.  
7. Serve with desired toppings. - Chopped fruit (bananas, strawberries, apples) - Whipped cream - Maple syrup or powdered sugar

Double Chocolate Zucchini Muffins

Zucchini Muffins
Ingredients
3 large bananas, mashed
1 egg
3/4 cup milk of choice
​1/4 cup plain Greek yogurt

1 tsp vanilla extract
1/3 cup vegetable oil
1 tbsp ground flax
1/4 cup chia seeds
1 1/2 cups whole wheat flour ​
3/4 cup white sugar
1 tsp baking powder
1 tsp baking soda
1/4 cup coco powder
1/4 tsp salt
1 grated zucchini
1/2 cup chocolate chips
Instructions
  1. Pre-heat oven to 350F.
  2. In a large mixing bowl mix all the wet ingredients except the zucchini (bananas, egg, yogurt, and oil).
  3. Make a hole in the middle and add in all the dry ingredients except chocolate chips.
  4. Mix until well combined be sure not to over mix as this makes the muffins tough.
  5. Once mixed fold in zucchini and chocolate chips.
  6. Pour into lined muffin cups and bake at 350F for 20-25 minutes or until a toothpick comes clean.

Triple Berry Banana Bread

Ingredients
3 large bananas, mashed 
1 egg
1/4 cup plain Greek yogurt
1 tsp vanilla extract
1/3 cup vegetable oil
1 tbsp ground flax
1/4 cup chia seeds

1 1/2 cups whole wheat flour ​
3/4 cup white sugar
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1/2 cup frozen/fresh berries  

Instructions:
1. Preheat oven to 350F.
2. Mix all wet ingredients except berries together (bananas, egg, Greek yogurt, vanilla and oil).
3. Make a hole in the middle of the wet ingredients and add in the all the dry ingredients. 
4. Stir until ingredients are mixed. Be careful not to over mix or the muffins will be tough. 
5. Fold in the berries. 
6. Pour into a greased 9x5" loaf pan and bake for 60 minutes.

Apple Cinnamon Banana muffins

1/3 cup canola oil
1/8 cup ground flax

2 tbsp hemp hearts
3/4 cup brown sugar
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1 tbsp ground cinnamon
3/4 cup diced peeled apples
​

Directions:
1. Preheat oven to 350 degrees.
2. Mash bananas.
3. Add all wet ingredients (egg, vanillas, yogurt, oil).
4. Then add all dry ingredients and mix until well incorporated.
5. Stir in diced apples.
6. Pour into liner muffin tins.
7. Bake at 350 degrees for 20-25 minutes or until a toothpick comes clean.

High Fibre Banana Chocolate Chip Muffins
